Grilled Peach Salad with Chicken and Veggie Kebabs

In the lovely Canadian climate that we live in, the BBQ can become a novelty for the summer. I like to make the most of it while I can by getting some good grilling time in with these chicken and veggie kebabs and even implementing grilled flavours into a salad!

Grilled Peach Salad

Ingredients

  • 1 box Mixed greens
  • 3 peaches
  • 1 avocado, cubed
  • 1/2 container strawberries, sliced
  • 1 cup pecans, chopped

Method

  1. Cut peaches into halves and place on grill until char marks appear. Remove, set aside and slice when cool
  2. Quick Honey Balsamic dressing: Combine 3 parts olive oil to 1 part balsamic vinegar, add a squeeze of  honey and a dash of salt and pepper
  3. Combine, greens, peaches, avocado, strawberries and pecans dress and enjoy!

Chicken and Veggie Kebabs

Ingredients

  • 1 large package of skinless boneless chicken thighs
  • 1/2 cup of extra virgin olive oil (EVOO)
  • 1/3 cup of white wine vinegar
  • 4 cloves garlic (  minced)
  • 2 tsp crushed red pepper flakes
  • 1 tbsp dried oregano
  • 2 tsp dried basil
  • 1/2 tsp each salt and pepper
  • 1/2 small onion ( cut into chunks)
  • 1/2 each red, green and yellow pepper cubed

Method

  1. Cut chicken into chunks and place into large ziploc bag
  2. Mix together EVOO, vinegar, garlic, red pepper flakes, oregano, basil, S+P.
  3. Pour mixture over chicken in the ziploc bag and shake to coat all of the pieces
  4. Refrigerate for 2-3 hours ( or for best results overnight)
  5. Soak wooden skewers in water for 3o minutes ( don’t want any fires!). Skewer an assortment of chicken, peppers and onions onto each
  6. Preheat your BBQ and grill over medium heat for approximately 15 minutes, turning occasionally
